His proposal is three EVOOs of the picual and arbequina variety of early harvest, made in the Las Villas region, in the olive-growing heart of Jaén. They come from the fruit collected before it is fully ripe and always on the tree, at the right time to achieve the cleanest and most powerful aromas and fruity notes. The most sincere sensations that the fruit can give us within a sensory balance.

This is the basis, the olive is its exact moment of maturation. And then it will arrive at the mill to become oil. A careful process, laborious and lavish in details, carried out with modern machinery and technology, but with the rush of yesteryear: few for bad advisers.
