Verdel or Mackerel from the Cantabrian Sea fish with a hook and cooked at a low temperature in its own juice. It is presented accompanied by Olive Oil and Extra Virgin Olive Oil of the Arbequina variety as well as Spring Salt.

The verdel walks along the Cantabrian coast at the end of winter. Exquisite blue fish, full of roe and healthy fat from the sea. They are fished with a hook one by one by small and early riser boats that at dawn pick up and arrive at port to sell this fish that Alalunga treats like a treasure.
