The bomba variety offers us a firm and loose grain. Once cooked, the grain evolves positively, it does not break, but bulges, hence its name. As the grain cools, it acquires greater consistency and exudes part of the liquid absorbed during cooking, so it acquires all its flavor and juice after being removed from the fire. Another important advantage is its resistance to overcooking.
