Grape: 70% Albariño, 22% Caiño and 8% Loureiro.
Albariño contributes to the mix with its fruity aromas and volume in the mouth. The Loureiro gives us good floral aromatic intensity and the Caíño offers you the mix of aromas of tropical fruits, balsamic and most importantly, great structure, character and uniqueness.
The Albariño and Caño come from the plots with lower altitude, that is, with higher humidity and warmer, which means an earlier harvest and therefore greater concentration, less acidity and more body in the wines. This Albariño is the one that is harvested the earliest, between September 17 and 25 and Caíño is the last variety that is collected, between September 28 and October 4, being the latest. The Loureiro comes from our vineyards of higher altitude and lower humidity, fresher, causing a slower maturation which gives us a live Loureiro with intense aromas and softness in the mouth. Harvested on September 26 and 27.
After a cold pre-fermentation maceration of various lengths according to the varieties, the alcoholic fermentation is conducted with our own yeast derived from our vineyard. After the necessary rest, the wine is stabilized and bottled.
The resulting surprising combination of varieties. It is a wine of great complexity where the citrus aromas of tangerine and orange peel and anise peel melt, with pleasant earthy memories, orange blossom and bay leaf.
Impression in the mouth for its powerful structure and character, filling the palate with its meatiness and velvety sensation. At the same time, it is fresh, cheerful, and very lively thanks to its excellent acidity, offering a pleasant, intense and very long finish. Both the aromas of the mouth and the taste sensations defined the good maturation of the 2018 vintage. This wine provides us with two apparently contradictory: it is a but easy to drink.
Wonderful combination with seafood: oysters, clams and crab.
Enjoy it also with Asian cuisine or with white meats or rice.
Optimum consumption temperature: between 10ºC and 12ºC.
