The Painted Country or Tolosa Alavesa bean has a vinous color on a flesh-pink background, the grain of this bean is almost round, smaller and very full.
This bean, once cooked, has quite good grain integrity, its skin is smooth and soft and has a very buttery albumen, very little grainy and has a high iron content. Black beans provide a dark broth and strong flavor once cooked and are one of the most appreciated varieties
